A staple on Italian tables, panettone is now one of the main symbols of Christmas. Among the endless variations, the delicious pistachio panettone is a must, but navigating through the numerous artisanal and supermarket options is not easy at all.
Among the best artisanal offerings is the artisanal pistachio panettone produced and sold by the "Caprice Coffee" bar in Bronte.
The packaging is very simple, using the classic cardboard box found in pastry shops, in a red color complete with a bow to give it a festive Christmas touch.
Let's get straight to the point: the dough of this panettone is extraordinary! Absolutely extraordinary! Tasty and delicate at the same time, with perfect leavening achieved using sourdough. An artisanal, slow, and meticulous process that creates an exceptional product: there are no words to describe the immense goodness of this panettone, which offers a unique pleasure with every bite.
The white chocolate coating is good, thick, and crunchy.
On the pistachio front, there is some chopped pistachio on the surface—good, but not a huge amount—and it is also found inside the dough (in the photo you will notice dark specks inside), which also makes an appreciable, albeit not decisive, contribution. The pistachio used is strictly from Bronte.
The filling is made with a cream (or mousse) containing 35% Bronte pistachio. The cream is delicious and delicate, pairing perfectly with the panettone, but the white chocolate flavor tends to partially overpower the pistachio. The pistachio therefore makes an important contribution to the flavor of the cream, but at the same time, it does not stand out in a particularly bold way.
Ultimately, it is an exquisite product and highly recommended, especially if you want to eat a masterfully crafted panettone, but provided you are not looking for an intense pistachio flavor.
NB: the panettone is also available without filling, which allows you to spread it when sliced with a cream with a more intense pistachio flavor, creating a perfect product!
