The Bronte pistachio harvest: here are the secrets behind its quality!

raccolta pistacchio bronte

Once again this year, we had the privilege of being guests at the 2025 Bronte Green Pistachio DOP harvest, a unique moment that marks the life and tradition of this extraordinary fruit.

The biennial harvest

Unlike many other crops, the Bronte pistachio is harvested only every two years. This allows the plant to accumulate energy, ensuring fruits that are richer in flavor and of superior quality. The wait is long, but the result is well worth it.

Volcanic soil: a gift from Etna

The plants grow on the slopes of Etna, rooted in mineral-rich volcanic soil. This unique condition gives the Bronte pistachio its unmistakable flavor and aromatic intensity, making it unlike any other pistachio in the world.

Hulling and drying

Immediately after harvesting, the fruits undergo hulling, which is the removal of the outer husk. This is followed by sun-drying, a fundamental step to preserve its freshness, aroma, and long shelf life.

How to recognize it

The Bronte pistachio is visually distinguished by its bright green interior, with purplish hues on the outside. The flavor is intense, sweet, and aromatic, capable of enhancing both sweet and savory recipes.
