The experience at BO&MIE in Paris

BO&MIE is a well-known chain of artisanal bakeries and pastry shops founded in Paris in 2017, with several locations scattered throughout the city. The display window is always extremely inviting, catching the eye with both sweet and savory offerings. During my visit, in addition to an excellent pain au chocolat, I decided to try their pistachio brioche.

 

The brioche: softness and intensity

The brioche comes in the classic spiral shape, known here as "Brioche roulée," with a generous topping of cream and whole pistachios. Upon biting into it, the dough is incredibly soft and slightly moist in a very pleasant way, with a perfectly balanced sweetness that never gets cloying.

But it is the heart of the product that makes the difference. The pistachio cream is of superlative intensity: I would say we are looking at a preparation with a very high percentage of pistachio, likely composed of only three ingredients (pure pistachio paste, oil, and sugar), without that white chocolate base that often dilutes the flavor. The dark color highlights a deep roast, which makes the taste even more intense and lingering on the palate.

The whole pistachios used for decoration are nice and crunchy and of good quality: they provide a lovely tactile contrast with the soft part of the brioche and, above all, add extra pistachio flavor to every bite.

 

The verdict

This is a truly delicious product, highly recommended for those seeking an authentic and powerful pistachio experience. If you find yourself in Paris, it is an absolute must-try. The only downside, marginal compared to the brioche: the espresso coffee was quite poor, but then again, we are in Paris and you get used to it.
