A new wave of viennoiserie in Verona

Opened in 2026, The Morning Club is a small pastry shop in Verona with a meticulously curated style, entirely dedicated to viennoiserie. No seating, just a few wall-mounted counters: you come in, order, and enjoy (or take away) excellence. We stopped by to test their offerings, focusing specifically on their pistachio croissant.

 

The dough: technique above all

At the first bite, the croissant reveals a textbook lamination. It is the ultimate expression of the technique currently in vogue: high-quality butter, super crunchy on the outside and perfectly soft on the inside. A delight for the palate, regardless of the flavor chosen.

 

The pistachio: fresh but not the star

The filling is interesting: not the usual industrial spread, but a pistachio pastry cream piped in fresh. The result is a very fresh, light, and highly pleasant cream. As for the pistachio flavor, it is noticeable and the raw ingredient is high quality, but the percentage isn't pushed very hard. With a higher dose of pure paste, it would have been mind-blowing in terms of pistachio intensity as well.

 

Other tastings and the verdict

We also tried the pain suisse and the treccina. In both cases, the lamination is insane. However, the pain suisse was a bit light on the cream, resulting in a slightly "dry" texture; the treccina, on the other hand, was perfect: abundant cream, beautifully vanilla-forward, and plenty of fresh fruit on top (blackberries in our case, but blueberries are also available). The cappuccino is decent, but nothing incredible.

 

All in all, a highly recommended spot if you love perfect lamination and enjoy the idea of a good, fresh, and delicate cream.
