A mix of soft and crunchy, but the pistachio flavor is very light.

Pasticceria Quaranta is considered by many locals to be one of the city's go-to spots, both for sweets and savory treats. One of their flagship products is definitely the PISTAKIOSA cake, which is a registered trademark. It is a semifreddo cake, and naturally, we couldn't resist trying and reviewing it!
It looks stunning, both in its external presentation and its internal layering, which is absolutely clean and precise, as expected from modern pastry. The overall taste is truly excellent, thanks in part to the great mix of textures, from soft to crunchy, which provides a wonderful experience on the palate.

We do have some reservations regarding the pistachio, as, just like we experienced with their granita, the pistachio flavor is heavily diminished by other overpowering flavors, particularly almond. In a dessert that explicitly calls out pistachio in its name, we would have expected a more intense pistachio profile. The quality of the pistachio used is, in truth, excellent, but no matter how good it is, it cannot compete with other stronger flavors.
In light of this, our rating is 7/10, as we are dealing with an excellent cake where pistachio is present, but in our opinion, it fails to truly stand out as the main ingredient.
