Super crunchy on the outside, incredibly soft on the inside.

Rating: 8/10
Pasticceria Di Dio is highly appreciated in Catania for the quality of its pastries, both the classics and the new items they periodically decide to introduce. As soon as we had the chance, we rushed to try one of their latest creations: the pistachio iris!
The iris, for those who aren't familiar with it, is a typical breakfast pastry consisting of a fried brioche, hollowed out and filled with pastry cream (traditionally white or chocolate). In this version, we find a pistachio pastry cream inside, while on the outside, over the fried dough, there is a coating of pistachio flour.
The dough is superlative, truly tasty and incredibly soft, with a super crunchy and dry fried exterior: one of the best iris around!
Regarding the pistachio, the cream inside is truly generous, making every bite of this pastry "explosive." Nevertheless, it never feels cloying, as it is a very fresh and light pastry cream. The cream is more delicate compared to "pistachio nutellas," which will please some and disappoint others, but it certainly makes the product much lighter.

The quality of the product is truly high and the filling is excellent. Also taking into account the lightness of the pastry cream, in which you can still taste the pleasant aroma of pistachio paste, for us it deserves a rating of 8/10 and is definitely recommended!
