Excellent dough, but the cream lacks a strong pistachio punch.

Laboratorio di Via Napoli (officially "Laboratorio D'Arrigo Fabio") is a true institution in Catania; it's hard to find anyone in the city who doesn't know it, famous in particular for churning out excellent sweet and savory treats until late at night! We must have eaten here at least a hundred times, and among our many tastings, we tried their sweet pistachio panzerotto.
The Catanese panzerotto has a slightly crispy dough, and at Via Napoli, it is perfectly executed, excellent in both taste and texture.
Inside, we find pistachio pastry cream (not what is commonly called "pistachio nutella"), which fills it completely. The filling is pleasant, but the pastry cream base clearly dominates, and therefore we couldn't really taste the pistachio.
It is certainly an enjoyable product, like all the excellent items from this bakery, but the actual pistachio flavor just doesn't come through. We definitely prefer other specialties from this place (the non-pistachio ones).
