Rame di Napoli are a typical Catanese pastry, made during the All Souls' Day period, featuring a cocoa dough base covered in dark chocolate glaze. Over the years, many variations have emerged, including pistachio rame di Napoli!

Every shop reinterprets them in slightly different ways, but today we are talking about Opera Prima (Catania), which has chosen to make them with a simple pistachio glaze over the classic base, without adding any cream.

Although the cocoa dough is very good (slightly orange-scented), from a pistachio perspective, these rame di Napoli are quite disappointing. The absence of pistachio cream inside is a dealbreaker, and the thin layer of glaze made with white pistachio chocolate fails to impart any real pistachio taste.
