Rame di Napoli are a typical Catanese pastry, made during the All Souls' Day holiday, with a cocoa-based dough covered in dark chocolate glaze. Over the years, many variations have emerged, including pistachio rame di Napoli!

Bar Alecci, in Gravina di Catania, has reimagined them with a super-pistachio approach, creating not only a pistachio glaze, but the entire dough as well! With these rame, they participated in the great rame challenge launched by Pistacchissimo in 2018.

The green, pistachio-based glaze completely covers the dough, which reveals a very tender and exclusive green dough, made entirely of pistachio. The flavor is sublime and, although it doesn't strike with a peak of maximum pistachio intensity, it leaves a fantastic, widespread, and very persistent pistachio flavor on the palate.

Between the glaze and the dough, we also find a thin layer of pistachio cream, obviously excellent as per the fine tradition of Bar Alecci (you can find all their product reviews here).

Ultimately, one of the rame that impressed us the most, with an extraordinary taste and a very soft, high-quality dough. The rating is 8/10, due to its pistachio flavor not being at maximum intensity, but truly excellent, well-distributed, and innovative.
