Good, but the cream leans too heavily on the white chocolate.

The recently opened Sherbet bar and pastry shop in Pedara makes beautiful and delicious sweets. How do their pistachio rame di napoli stack up? To find out, they participated in the great 2018 rame challenge.
The rama is very well-crafted, but features a very white glaze. Unfortunately, the filling cream is also rather pale, with a pistachio percentage that is too low to mask the taste of the white chocolate.
The cream is excellent, not cloying, with a truly great white chocolate flavor, but sadly the pistachio is barely noticeable. The cookie is also excellent, making the sweet very pleasant and balanced, but simply not pistachio-forward enough.
We are sure they will be able to improve next year by increasing the pistachio, but based on the ones in the competition, the rating is 4/10.
