Excellent pairing with Cioccolato di Modica, but the pistachio is just a hint.

Panettone Pistacchio Peluso Modica

A staple on Italian tables, panettone is now one of the main symbols of Christmas. Among the endless variations, the indulgent pistachio panettone is a must, but navigating the numerous artisanal and supermarket options is not easy at all.

Among the many made in Sicily offerings is the pistachio panettone produced by "Peluso" in Modica, available at their shop in Modica.

The packaging is very elegant, featuring a black and white box decorated with great taste, which opens completely once the lid is removed.

Panettone Pistacchio Peluso Modica

The dough is very soft and well-risen, thanks to the 36 hours of natural leavening, with a good classic panettone flavor, further enhanced by a slight candied fruit aftertaste (despite there being none), likely achieved through flavorings. Inside the dough, we find a large number of Cioccolato di Modica drops, which are absolutely delicious, but where the 5% pistachio stated on the label is completely negligible.

The pistachio cream is provided separately in a piping bag, which you can use to fill the panettone as you slice it. The percentage of pistachio in this cream is 15%, which effectively turns out to be a white chocolate pistachio spread. This cream pairs beautifully with the panettone, resulting in an excellent overall taste, also thanks to the softness of the dough, but the pistachio flavor is barely hinted at, as the white chocolate takes center stage. For the sake of accuracy, the piping bag solution, while fun, is inconvenient in some situations, especially for storing the product if it is not consumed all at once.

The topping is simple, made with white pistachio chocolate, again with 15% pistachio, as well as a few embedded pistachio pieces. The pistachio flavor in the topping is very light, but present.

It is therefore an excellent product that will certainly delight those who love the combination of Cioccolato di Modica and white chocolate, but it has a very delicate pistachio flavor, both in the topping and the cream, so the rating for the pistachio cannot be high. Going beyond the mere 15% pistachio content would significantly improve this aspect.
