Rich filling in a delicious artisanal pistachio dough.
Among the pistachio panettoni that impressed me the most during the 2018 and 2019 Christmas seasons, there is, without a doubt, the one from Caffè Galaxy, in Bronte.
The panettone features an excellent pistachio dough, soft and well-leavened, with a beautiful amber color and a great flavor.
The pistachio cream filling is truly very generous, and in almost every slice, you will find a remarkable amount of cream, certainly above average. The cream is truly exquisite with a fantastic consistency that blends perfectly with the soft panettone. In short, the marriage between dough and cream is perfect!
The topping is substantial and very rich in fresh, crunchy chopped pistachios, which are truly excellent. The only tiny flaw, for my taste, is the glaze being slightly too sweet.
I liked the 2019 version even more than the 2018 one, with a definitely more pronounced pistachio taste, thanks to the combination of cream, dough, and chopped nuts, all of which are excellent! Without a doubt, one of the panettoni that impressed me the most—distinctly artisanal and truly delicious!
