A good panettone with a delicate pistachio flavor.
Cordial Bar, in Bronte, creates many pistachio-based products, and for Christmas, their Pistachio Panettone is a must.
It is an artisanal panettone, filled with their own house-made pistachio cream, glazed with pistachio white chocolate, and topped with chopped Bronte pistachio DOP.
As soon as you open it, you can sense the artisanal quality of the dough, which is soft and very tasty. The pistachio cream filling, at 30%, is well-distributed and has a soft, very natural color, indicating the absence of artificial dyes.
NOTE: in 2018 the cream was at 20%, in 2019 it rose to 30%, with a noticeable improvement! The topping has also improved, with the removal of sugar crystals and the addition of abundant chopped pistachios!
The overall flavor is excellent, with a great balance between the dough and the filling. The cream is very delicate, with a subtle and natural pistachio flavor, without any toasted notes, and a milky base undertone.
The chopped pistachios all over the surface are very pleasant, providing a nice crunch and a good pistachio taste.
