Super soft dough and rich pistachio filling!
Just in time for Easter 2019, we tried the pistachio colomba from Bar Rocher in Giarre (also known as Cafè Rocher).
The 1kg colomba is filled with pistachio cream (also known as pistachio nutella) and glazed with pistachio chocolate, sugar sprinkles, pistachios, and almonds.
The dough inside is both soft and substantial, truly tasty, showcasing the artisanal quality of the product. The pistachio cream filling is quite generous, providing an excellent pistachio flavor in every bite. The roasting level of the pistachio is quite high. The label does not state the percentage of pistachio, but it tastes like an excellent cream!
The topping is enjoyable thanks to the crunchy sugar sprinkles, but it doesn't add much pistachio flavor, partly due to a slight almond taste. The latter is not overwhelming, but it is still superfluous, and we hope the shop might decide to remove it in future batches.
Ultimately, an excellent artisanal Easter colomba with a great dough and rich filling, which could be improved only in its topping.
