A charming little tree with an all-pistachio sponge.

The 2018 Christmas holidays brought us many treats, and among them, we discovered an interesting pistachio cake shaped like a Christmas tree.
The sponge inside is entirely pistachio-based, made with pistachio flour and pure pistachio paste. Inside, there is also a small amount of pastry cream (not pistachio-flavored), but in small doses. Finally, the surface is covered in dark chocolate.
I really loved the sponge, with its softness and its very pleasant pistachio aroma. Clearly, being a pistachio sponge cake, the flavor isn't as intense as a cream, but in its category, it is among the best pistachio sponges I have tasted, because despite the baking, it manages to maintain a good pistachio flavor and, above all, to remain "moist" and soft (whereas these types of sponges usually dry out quickly).
Biting into this soft pistachio sponge is a real pleasure.
The pairing with the cream and dark chocolate didn't convince me 100%, but it is true that they are present in small quantities and are therefore marginal: most of the time you will only be tasting the sponge.
If you are looking for a dessert packed with pistachio cream, this isn't for you, but if you have a palate capable of appreciating the quality of this pistachio sponge, then you should try it. The rating, considering the type of product, is 8/10, thanks to an excellent pistachio sponge cake.
