Rame di Napoli are a typical Catanese treat, made for the All Souls' Day holiday, featuring a cocoa dough base covered in dark chocolate glaze. Over the years, many variations have emerged, including pistachio Rame di Napoli!

As you go around to pastry shops, bakeries, and fairs, you'll find them made in all sorts of ways, but today I'll tell you about the ones prepared by Caffè Mazzella (Pedara), which has chosen to make them with a very simple cocoa dough covered by a layer of pistachio cream and glaze.

Externally, the pistachio glaze coating is almost total, appearing green and completely covering the cocoa dough. Once you take a bite, you'll discover all the various layers in detail. The cocoa dough is truly very simple, perfect for those who aren't fond of the aroma of orange or cloves (typical of the original recipe). It's not very soft.

The pistachio glaze is good, but the real masterpiece is the pistachio cream found just below, characterized by the excellent pistachio flavor that Caffè Mazzella has always accustomed us to in their desserts (especially their phenomenal pistachio cornetti). The layer is thin, but given the intense flavor, it does its job perfectly, contrasting with the cocoa base and delivering that pistachio punch.

Given the excellent pistachio flavor, they deserve a rating of 8/10. Highly recommended for those seeking a simple dough, but not recommended for those who specifically want the characteristic traditional aromas in their Rame.
