The shell is crunchy and dry, as good Sicilian tradition demands, but the real masterpiece (for pistachio lovers) is the pistachio ricotta filling! Ricotta and pure pistachio paste are blended perfectly, reaching a fantastic balance of flavors, while also maintaining the texture of the ricotta, a fundamental element in making a dessert like the cannolo unique.
