Excellent dough and good cream, but not quite enough of it.

Pasticceria Basile, in Aci S. Antonio, participated in our big challenge with their beautiful pistachio rame di napoli.
The aesthetics are very polished, with a perfectly circular shape and a gorgeous colored glaze (probably the most beautiful among all the rame we've seen!).
The dough is delicious, with the right balance of chocolate and softness, and the pistachio cream is also very good. Unfortunately, the cream injected inside the rama is not very abundant, meaning it can only be tasted occasionally.
With a more generous portion of pistachio, it would undoubtedly have been among the best. Based on the amount we tried, the rating is 7/10 in our super ranking of the best pistachio rame 2018.
