Bar Azzurra, in Valguarnera, a small town in the province of Enna, boasts high-level pastry making, where their pistachio treats really stand out. We tried their "pistachio occhio di bue".
The cocoa dough is exceptional, both in flavor and crunchiness, accompanied by a generous amount of pistachio cream (or pistachio nutella, if you prefer), which tastes truly great!
The pistachio is noticeable and of high quality, with a flavor that pairs perfectly with the cocoa. Clearly, the overall pistachio taste is slightly mitigated by the contrast with the cocoa, but the final result is outstanding and it really is an excellent cookie!
Their other pistachio pastries are also highly recommended—they're really good!
