Artisanal panettone filled with pistachio cream.

Bar Ernesto is undoubtedly one of the most famous and historic bar/pastry shops on the Catania seafront, and for our 2018 panettone ranking, we tasted their pistachio panettone.

The packaging is meticulous in every detail, truly beautiful and elegant, revealing a stunning and equally well-crafted panettone.

The white chocolate pistachio glaze is completely studded with chopped pistachios, some almost whole, which look very inviting. Inside, it is filled with a 40% pistachio cream. The pistachios used are from Raffadali: in my opinion, not comparable to the quality of Bronte pistachios, but still good and Sicilian.

The artisanal dough has a wonderful amber color, with a rather delicate taste, designed to enhance the pistachio cream. The cream is very good, even if it is a bit dark due to contact with the dough, which causes it to lose some flavor intensity. Surely, when freshly filled, the pistachio taste is significantly more intense.

Ultimately, the rating is 8/10, given the generous filling and rich glaze, but I am sure with a 40% cream, one could definitely achieve a more punchy flavor and reach the top score.
