Raisins, candied fruit, and salt overpower the small percentage of pistachio.
For the holidays, Michelin-starred chef Carlo Cracco offers a line of panettoni, which includes a pistachio version.
Inside, it is a classic panettone with raisins and candied fruit. The surface features a white chocolate glaze with 3% pistachio paste + 0.5% chopped pistachios. To finish, it is sprinkled with Maldon salt and topped with 2% caramelized pistachios.
In my opinion, the pistachio flavor fails to come through, both due to the very low percentage and the presence of strong elements like salt, raisins, and candied fruit.
The one I tasted also had a rather dry dough, in my view, and was not particularly soft.
