A "gelatinous" cream where you can't taste the pistachio at all.
Star chef Antonino Cannavacciuolo offers a line of panettoni for the holidays, which includes a pistachio version.
Inside, the dough is very simple, with no raisins or candied fruit, filled with a pistachio cream (10% pistachio content).
The topping is a white chocolate glaze colored green, with zero pistachio content. The dyes chosen give it a rather unnatural "apple green" hue for a pistachio product.
In my opinion, the pistachio flavor fails to come through, both because of the very low percentage and the type of cream, which is not a classic anhydrous "spreadable cream," but rather a "gelatinous" one with an intrusive base aftertaste.
The dough is very soft and delicate, with a highly aerated structure.
Overall, it is pleasant in terms of texture, being very soft, but "anonymous" in flavor, especially due to the choices made for the cream and glaze.
