Panificio San Giuseppe in Catania is one of the most appreciated bakeries for the quality of its doughs and its constant search for new flavor combinations.

At first glance, it looks like the classic Catania "pane cunzato": the shape is that of the traditional cuccidatu, the iconic semolina ring that we Sicilians know so well. But at the first bite... surprise! The dough actually hides the soul of a Neapolitan panuozzo.

The result? A truly crazy contrast of textures: super crunchy on the outside (especially if freshly warmed up) and a soft-as-a-cloud interior. This technical choice is not just a fancy touch, but it makes every bite decidedly lighter and more melt-in-your-mouth compared to classic semolina bread.

The bakery offers various toppings, but obviously, my radar immediately tuned into the pistachio version, which here goes by the name "Meraviglia". And I assure you, the name fits perfectly.

Inside, we find a triumph of flavors: pistachio cream, mozzarella, sausage, mushrooms, eggplant, pistachio pesto, and pistachio flour.

It is an extraordinarily rich and tasty filling. The pistachio used is of excellent quality, but obviously, given the presence of many other bold-flavored ingredients like sausage and mushrooms, the pistachio is not the only star of the show, but it plays its part brilliantly.

The thing that struck me most is the balance: despite the richness of the filling, there is never an imbalance of flavors. Everything blends perfectly, resulting in something savory but never cloying or heavy. You eat one slice and immediately want another.

My advice: It is ideal to order a whole one to share at home with friends or family during an informal dinner (by reservation), but if you are passing by, you can also stop at the bakery to grab a nice slice on the go (subject to availability at the counter).
