Crunchy shortcrust pastry with a pistachio cream center.
The new Baiocchi al Pistacchio cookies immediately caught the attention of everyone who has always loved the legendary traditional Baiocchi.
The shortcrust pastry is the same as always—delicious and perfectly crunchy—but inside we find a pistachio cream instead of the cocoa and hazelnut one.
The percentage of pistachio in the cream is 7.6%, and when tasting just the cream, the pistachio is perceived very, very faintly. In the overall bite, i.e., together with the cookie, this aftertaste is almost completely lost, overwhelmed by the full flavor of the pastry.
They are certainly pleasant, not least because there is no unpleasant aftertaste of artificial flavorings, but if you are looking for a concrete pistachio flavor, in my opinion, you won't find it here.
I believe the traditional Baiocchi are still unbeatable, thanks to the more distinct contrast between the cream and the cookie.
