A good granita in the city center, but it could be more intense.

Insigne is one of the best cafes in the historic center of Catania, with two locations available (one on Via Etnea and another nearby). Famous for their apericena (and more), we tried their pistachio granita.
The granita is quite creamy (especially if you let it soften for a few minutes) and has a nice color. The sweetness is well-balanced.
The flavor is pleasant; in fact, you can really taste the pistachio and there are no unwanted aftertastes. The pistachio flavor is generally natural, but I believe that with a slightly stronger roast, it could be more intense.
In many cafes in the center, it is common to use almond in pistachio granita, whereas here it is not present, which certainly makes it one of the best granitas in the historic center, even if with a few small adjustments it could be even more intense!
