Sapore di Sale is a place we know well for the quality of its gelato, with locations in both Cefalù and Capo d'Orlando. When we stopped by, our expectations were high, and they were confirmed by the visual impact of their pistachio granita.
The color is intense yet natural—no neon laboratory greens here—and the texture appears very dense, almost as if it's shouting about a high percentage of pistachio in the mix. It's one of those cases where your eyes tell you: "there's good stuff here."
The tasting: pleasant, but we could have aimed higher
Bringing the spoon to our mouths, however, the perception shifts slightly. The pistachio flavor is there; it's clean, pleasant, and above all, free from unwanted aftertastes or chemical notes. That’s already a great starting point.
However, it lacks that extra kick that the dense appearance and intense color had promised us. The taste is present, but it doesn't explode with the intensity one would expect from such a visually well-represented raw ingredient. It’s likely a matter related to the processing of the paste or the roasting, which doesn't quite manage to transfer all its power to the palate.
The verdict
It is a good granita, without a doubt, and you can tell there is a gelateria behind it that focuses on quality. We just wish the final result lived up to the visual promise. With a few adjustments to how the raw ingredient is processed, it could become an absolute benchmark.
Sapore di Sale is located in Cefalù and Capo d'Orlando.
