If you find yourself strolling through Zafferana Etnea and pop into the main square, Dolceria Torrisi is a solid option for a delicious break. We decided to try their pistachio granita, looking for that bold flavor we expect from the "green gold."

The tasting: delicacy and a few technical limitations

Overall, the experience was pleasant and refreshing. A point in their favor is the immediate absence of that almond or marzipan aftertaste that often gives away lower-quality products: here, the pistachio is genuine, even if of medium intensity. The profile is quite delicate—present, but not overpowering.

We noticed a texture that was at times a bit too icy, with frost crystals noticeable on the palate. It must be said that we tasted it at the end of the day: it is very likely that in the morning, with the product freshly churned, the texture is much softer and creamier. A detail to keep in mind for our next visit.

Comparison with the mulberry granita

Comparing it to the mulberry granita, the latter presents a much more marked character, with an intensity and personality that the pistachio, in this specific tasting, lacked. To reach levels of excellence, Dolceria Torrisi should push a bit more on the raw material, increasing the amount of pure paste or choosing a roast that better enhances the aromatic notes, bringing it to the same level of intensity as the mulberry.

Verdict

It is an honest granita, without any major flavor flaws, but it fails to thrill those looking for a super-pistachio experience. If you are already in the square in Zafferana and want something refreshing, it works. However, if you are hunters of intense flavor, perhaps it is better to look elsewhere or focus on the mulberry, which is clearly the star here.
