A wonderful harmony of flavors. Phenomenal pistachio ricotta.

After talking about the delicious Pistachio Rocher Cake from Caffè Mazzella, in Pedara, it's time to discover another one of their treats: the Pistacotta!
It is a beautiful and delicious layered cake, with numerous nods to typical ingredients of the Sicilian tradition:
- Crumbled cannolo base
- Ricotta
- Dark chocolate
- Pistachio ricotta
Sinking your fork through the various layers is a real pleasure, but savoring them is even better! The quality of all the ingredients is truly excellent, from the crunchy base to the creamy ricotta, all the way to the firm layer of dark chocolate.
The real highlight for a pistachio lover is, of course, the pistachio ricotta, with an incredibly intense and perfectly defined flavor: probably the best pistachio ricotta I have ever tasted! It's no coincidence that the name "Pistacotta" is a combination of "pistacchio" and "ricotta".
So, why a rating of only 7/10? Because, unfortunately, the various layers, especially the dark chocolate one, heavily mask the pistachio flavor (which is delicate by nature), muting the overall pistachio taste of the cake. A real shame, given that the ricotta on its own would deserve the top score!
Ultimately, it's a spectacular cake, but you'll be forced to take a few forkfuls of the pistachio ricotta on its own if you really want to taste the pistachio.
