Although the name evokes the prosciutto crudo (one of the ingredients) rather than the pistachio, the latter is the star of this pizza. It is a good pistachio pizza.
The pizza is topped with a delicate layer of cream, a generous sprinkling of chopped pistachios (coarsely ground), slices of prosciutto crudo, and finally, pistachio pesto. All of this is supported by a good dough, in typical Catania style.
Because of the cream base, this pizza offers an almost "sweet" taste on the palate, which is very interesting and contrasted by the flavor of the prosciutto crudo.
The chopped pistachios are crunchy, while the pistachio pesto, spread raw, emphasizes the pistachio flavor on the palate. The quality of the pistachio is good.
The "patchy" distribution of the pesto means that some spots remain uncovered, creating an alternation of flavors that some will love and others might appreciate less.
Ultimately, a good pistachio pizza with good value for money.
