Ardè is a takeaway pizzeria that opened a few months ago in Piazza Risorgimento in Catania, near the bustling Corso Indipendenza and Viale Mario Rapisardi. After trying their excellent pistachio focaccia, I decided to taste their pistachio pizza.
The dough, in a contemporary style
Here too, the dough is made with Petra flour: soft, airy, in a contemporary Neapolitan style, with the leopard-spotted crust typical of high hydration doughs. It is different from the classic, crunchier takeaway pizza found in Catania: it's a matter of personal taste, not a flaw, but it's good to know before ordering.
The heart: the pistachio
The pistachio here comes in three forms combined: cream (cream-based), pesto, and chopped nuts, all of excellent quality. The flavor is intense and well-defined, authentic, never masked by excess oil or artificial aromas, and it pairs perfectly with the high-quality prosciutto crudo used as a topping.
Verdict
A high-level pistachio pizza, among the best takeaway options in Catania: few competitors can keep up. Highly recommended for those looking for real pistachio who don't mind a soft dough; at Ardè, the pistachio focaccia is also worth a try.
