Il Nuovo Forno da Vincenzo is a takeaway/delivery pizzeria in Catania, specializing in traditional Neapolitan pizza, meaning a soft and thin dough with a small crust.
I tried this place on a Saturday night, so at the peak of "difficulty" given the typical Saturday rush, yet the result was excellent!
I chose the "nuovo forno" with: pistachio cream, mozzarella, sausage, potatoes, and pistachio flour.
I really liked the pistachio cream, which is cream-based; it was very present but never cloying, providing an overall "sweetness" that contrasted well with the excellent flavor of the potatoes and sausage. The pistachio flour, used in just the right amount, rounded out the flavor and texture on the palate.
I really enjoyed the dough; as a lover of traditional Neapolitan pizza, it was soft and melt-in-the-mouth, with just the right amount of saltiness. Obviously, it's not recommended for those who don't like soft Neapolitan pizza and prefer crunchier crusts instead.
The red pizzas are also worth noting, such as the provola and pepper, where the tomato sauce turns out to be extraordinary:
