Delicious dough and plenty of pistachio—a real treat!
The pizzolo is a specialty typical of Sortino, but there are various reinterpretations, such as the Etna-style pizzolo I want to tell you about in this review! You can find it in Pedara at both Ara dell'Etna (a venue with seating) and Pizzeria Etna (takeaway/delivery pizzeria). Both establishments are owned by the same proprietor, so they make many similar products, like this pistachio pizzolo.
The crunchy dough is excellent in terms of both flavor and digestibility, thanks to the use of Sicilian durum wheat flour and a long maturation period.
Inside, it is filled with: cheese, pistachio pesto, and sausage. It is garnished on top with: Parmesan and pistachio flour.
The pistachio flavor is very prominent, thanks to the quality and quantity of the pistachio, which is also reflected in the beautiful, well-distributed green color. The cheese binds the filling, making it creamier, while the sausage adds a slight, very welcome contrast that is never overpowering.
A truly delicious product that, as mentioned, can be enjoyed either at the table (at Ara dell'Etna) or via delivery/takeaway (at Pizzeria Etna). If you like the idea of a crunchy dough with a very pistachio-packed filling, you absolutely must try it!
