An exceptional balance of flavors, but it's a shame you can't taste the pistachio.

On the slopes of Mount Etna, in the streets of Zafferana Etnea (Catania), the siciliana is a true institution, and the Gli Aragona shop knows how to make it really well. The pistachio siciliana is a staple on their menu, even if the final result isn't quite what one would expect.

The ingredients are: tuma cheese, ham, pistachio pesto, and chili pepper. The frying is simply perfect and the quality of all the ingredients is excellent, starting from the great dough, to the delicious tuma and the tasty ham. It's not as large as others in the city, but it's very well-made and the overall taste is excellent, with a perfect balance of flavors.

The disappointment comes when you try to detect the taste of pistachio: it's totally absent! A real shame, because when tasting the pistachio pesto on its own, it is of good quality, but there is too little of it and it is paired with very strong flavors that inevitably overpower it.

It's worth noting that the tuma is very abundant, which is a plus for me since I love it, but it might bother those who aren't big fans of cheese.

Given that the pistachio flavor is completely absent, I can only award a rating of 2 pistacchi, but given the overall quality of the product, I sincerely hope it can be improved so the rating can be raised.
