A dough that is a true masterpiece! Very delicate pistachio cream.

Rating: 7/10
A staple on Italian tables, panettone is undoubtedly one of the main symbols of Christmas. Among the infinite variations, the pistachio panettone is a must, and navigating through the numerous supermarket and artisanal options is never easy.
Among the many artisanal offerings is the pistachio panettone produced by "Pasticceria Gugliotta", in Fiumedinisi, a small town in the province of Messina, where this small but high-quality pastry shop is located.
The packaging is beautiful, with gold lettering on a very intense green background, sharply contrasted against the white. The sliding opening is both convenient and stylish!

The dough is a true masterpiece of high-end pastry, absolutely extraordinary! The panettone is leavened to perfection, with a significant, well-distributed honeycomb structure, but above all with an impeccable balance of flavors, never too sweet. The real magic lies in the fact that, although there are raisins and candied fruit, in this panettone they are barely hinted at, finely chopped, and never invasive, giving an extraordinary overall flavor that 100% wins over even those who don't like these ingredients.
The coating is thick and crunchy, made with excellent white chocolate, but above all with delicious toasted pistachios, coarsely chopped.
The only sore point, which breaks the magic of this picture of perfection, is the pistachio cream used for the filling: although delicious, it has a pistachio taste that is only vaguely hinted at, almost imperceptible. It is mostly a buttery cream (in a positive sense), which tends to remind one of a delicate white chocolate.
We could have devoured the whole thing because of its enchanting dough, and we regret not being equally enthusiastic about the pistachio cream. The excellent pistachios in the coating compensate a bit for the cream's shortcomings, but they cannot perform miracles, so the overall rating is 7/10, as the overall pistachio flavor is just too delicate.
