A soft and tasty panettone, but lacking in pistachio flavor.

A staple on Italian tables, panettone is now one of the main symbols of Christmas. Among the infinite variations, the delicious pistachio panettone is a must, but navigating through the numerous artisanal and supermarket options is not easy at all.
Among the many options is the pistachio panettone produced by "BedduViddi", in Valverde, in the province of Catania. It can be purchased both in their shop in Valverde and online on their official website.
The packaging is beautiful, with a box in soft green and white tones, rich in small, well-curated design elements: starting from the choice of font, down to the specific crop of the image featuring pistachios. The real touch of class is the opening of the package, the bottom of which "flares" open completely once the lid is removed (you can see it in the video at the end of the article).
The 1 kg panettone is quite large and looks pretty good, although the pistachios, while abundant, do not seem to reach the quantities seen in the photos on the website, but as it is an artisanal product, these are minor differences that can happen.
The dough is very soft and well-leavened, with a very simple taste that reminds one more of a pandoro than a panettone. The inside is also slightly moist, which gives a pleasant sensation of freshness to the product, resulting in a very enjoyable and delicate dough. No raisins and no candied fruit, as one would expect from a pistachio panettone.
The pistachio cream used for the filling is truly abundant and well-distributed, but the exact percentage of pistachio is not indicated. It is an alcohol-based cream, not a "pistachio Nutella," therefore the pistachio flavor in the cream is barely hinted at, if not completely imperceptible. The cream, with its "gelatinous" consistency typical of such creams, has a good flavor, but the alcoholic aftertaste is very present, unfortunately overshadowing any potential pistachio taste.
The coating, although simple, with its drizzle of pistachio white chocolate, manages to provide a delicate pistachio flavor, together with the very good pistachios embedded on the surface.
It is therefore a good product, with a generally enjoyable overall flavor, but one in which the pistachio taste comes only from the coating, which cannot work miracles to balance what the cream fails to do. Therefore, the rating cannot go beyond 4/10.
