The leavening is perfect and the taste is fantastic, thanks to the use of natural, high-quality ingredients. The deep yellow color comes from the use of abundant, ultra-fresh egg yolks.
The pistachio cream is very delicate and pleasant, with a nice roasted note. It is likely among the best 20% creams we have ever tasted, but it remains a relatively low percentage, which allows the base flavor of the cream to come through, meaning the pistachio is not the sole protagonist. The flavor pairing between the cream and the dough is excellent, thanks to the absence of overpowering aromas in the latter.
