Very rich pistachio topping, very subtle cream.
The pistachio panettone produced by Bonfissuto is one of the most famous in Sicily, so we put it to the test for our 2018 ranking.
The packaging is wonderful and well-structured, including a plastic spreader to apply the jarred cream as you slice the panettone.

The panettone is very large and richly garnished on top with slightly toasted whole pistachios embedded in white chocolate. When sliced and bitten into, it is soft and definitely good, with a fairly neutral taste designed to pair with the various available fillings (including, of course, the pistachio one).
The pistachio cream, with a pistachio content of 20%, is underwhelming due to the strong flavor of the "vanilla" base, which doesn't allow the pistachio to stand out.
However, the topping mentioned earlier is very good, thanks to the many whole pistachios that, when crunched, deliver a pleasant toasted pistachio flavor and a satisfying crispness that contrasts (positively) with the softness of the dough.
