A massive 'ruota di carro' pizza with pistachio pesto.

The pizzeria "Da Michele I Condurro" is located in Milano and should not be confused with the more famous "Da Michele," a true icon of Napoli. With that necessary clarification, let's start the review of their pistachio pizza.
You can immediately feel a touch of Neapolitan style upon entering, partly because "this Michele" is part of the historic family. The final confirmation comes when the "ruota di carro" arrives at the table—a truly massive pizza that barely fits on the plate.
The crust (cornicione) isn't very pronounced, but it remains very fluffy. The dough in the center of the pizza is very thin due to how widely it is stretched. The bottom is quite charred, an aspect often tolerated in the Neapolitan style, but one that I personally don't appreciate very much.
The pistachio pizza is a white pizza (as it should be), with pistachio pesto, mozzarella, and salame Napoli. Regarding the latter ingredient, I suggest a delicious variation with crumbled sausage, which is truly delightful!
The mozzarella is very good and abundant, making the pizza consistently moist and flavorful, also thanks to the contrast with the cured meat (the salami is saltier, the sausage is sweeter).
The pistachio flavor isn't very strong, as the pistachio pesto is distributed mainly on the edges (where it isn't covered by the mozzarella). In the center, it is almost imperceptible, while near the crust, you can catch a pistachio flavor that, while not very strong, is pleasant.
Increasing the amount of pure pesto would certainly make it more intense! Also, avoiding the charring on the bottom of the pizza would help emphasize the sweetness of the pistachio, which is otherwise masked in several spots by the bitterness of the burnt parts.
Ultimately, it's a good, very large pizza where the pistachio delicately accompanies some bites. It is certainly above the Milano average, if only for the choice of using pistachio pesto instead of a simple dusting of flour.
