The setting
Gusto Gourmet Store has locations in both Siracusa and Noto, the latter being a UNESCO World Heritage site known for its Baroque architecture. In such a setting, rich in history and beauty, one expects the gastronomic offerings to be equally refined, especially when it comes to excellent Sicilian products like pistachio.
The tasting
Ordering the pistachio granita, the visual impact is immediate: this isn't the usual pale green color from artificial flavorings, but a dense preparation where the chopped pistachio is abundant and clearly visible. It's a clear sign: the raw ingredient is there and it shows.
On the palate, the pistachio profile is intense and the creamy texture confirms the quality of the base. However, a structural limitation emerges immediately: the sugary note is very pronounced. The sweetness overwhelms the palate, partially masking the finer nuances of the nut, such as that toasted note or the slight persistence of the skin that often characterizes the best Bronte pistachios.
The verdict
It is undoubtedly a pistachio-packed granita, but the balance is compromised by the sugar. For those with a high tolerance for sweetness, it can be a delight; for those seeking purity of flavor or a sharper contrast, it feels cloying. Reducing the sucrose slightly would be enough to let the natural flavor of the pistachio shine, which plays a leading role here but is held back by the sweetness.
Practical advice
If you love very sweet flavors and want a granita with plenty of texture, go ahead and try it. If, however, you are looking for a more balanced experience where the pistachio can express its full complexity, you might find it too heavy. In that case, consider other options at the shop or ask if it's possible to adjust the sweetness.
