Fantastic taste and crunchy dough, but the pistachio doesn't stand out much.

Rating: 7/10
Among the streets of Carlentini, the home of the pizzolo, we tracked down and tried a new spot, Maradé. Among the tempting options on their rich menu is an interesting pizzolo with "Chicken & Pistachio," which is enjoying huge success, so we rushed to try it!
Don't call it a "closed pizza," because if you don't know what a pizzolo is, or worse, if you've only had it at one of the many pizzerias that "improvise" it, you absolutely must know that the pizzolo has a very different dough from pizza, with a truly unique crunch and texture. At Maradé, they are true pizzolo artists, with a perfect dough following the best traditions of Carlentini, excellent in both taste and texture.
The ingredients are simple: chicken, cheese, pistachio pesto.

Moving on to tasting the famous "Chicken & Pistachio" pizzolo, we are met with a truly sublime taste, thanks to both the excellent dough and the tasty, abundant ingredients used for the filling. The chicken is undoubtedly the highlight, incredibly tender and seasoned to perfection, just as the cheese that binds everything together is excellent. Every bite is a real pleasure, moving from the crunchiness of the dough to the softness of the filling—all very delicious.
While we are enthusiastic about the overall taste, focusing on the pistachio, we are a bit disappointed because the flavor is decidedly overshadowed by the other ingredients. We can only really taste the pistachio in spots where the other toppings are less present. We are pleased to note that the pistachio pesto used is of excellent quality, so it can certainly be done better! One solution could be to reduce the cheese a bit and increase the pistachio, but above all, blend them better.
Ultimately, due to its overall quality but a pistachio flavor that isn't always clearly perceptible, the rating is 7/10, but we are sure that Maradé will be able to improve it, perfecting the balance of flavors to make what is effectively their signature dish perfect.
