Excellent dough and great pistachio flavor.
Among the best takeaway pizzerias in Catania is certainly Perlage Pizza Gourmet, which features three pistachio pizzas on its menu.
We tried two of them (Bronte and Perlage), and while we were positively impressed by the pistachio flavor of both, we preferred the Bronte!

Even though it is just a takeaway pizzeria, you immediately notice an attention to detail that is quite out of the ordinary, starting from the elegant menu with a few well-thought-out pizzas, to the aesthetics of the shop.
The "Bronte" pizza is made with: Bronte pistachio DOP pâté, fiordilatte mozzarella, buffalo mozzarella, prosciutto crudo, and chopped pistachios.
The balance of ingredients is spot on, and you can taste them all without them excessively masking the pistachio flavor, although clearly, the spots where the pistachio pâté is most concentrated provide the best moments for pistachio lovers.
The pistachio pâté is essentially a pistachio pesto, meaning oil and crushed pistachios, and it is very good and not too oily. The granularity of the pistachio is excellent, providing texture as well as pistachio flavor. The quality of the other ingredients is also excellent.
The real pride and joy of Perlage, however, is the dough, which is significantly better than the average takeaway pizzeria, thanks to the use of premium flours (evident from the dark color of the dough), excellent leavening, and impeccable baking.
It is definitely among the most recommended takeaway pizzas if you want to eat a good pistachio pizza, with a dough that is clearly above average!
