Excellent dough, but you can't taste the pistachio.
Rating: 4/10
The takeaway pizzeria Carboni Ardenti, in Catania, stands out for the quality of its dough and the freshness of the ingredients used, so we decided to put their pistachio pizza to the test.
Although there is nothing to complain about regarding the general quality (in fact, it is a truly excellent takeaway pizza), we were a bit disappointed on the pistachio front. The pizza we tested is called "Brontese" and is made with:
- Mozzarella
- Cream
- Grana
- Prosciutto crudo
- Pistachio

The pistachio consists of a (fairly generous) dusting of pistachio flour. Its quality is average, but unfortunately, it fails to provide a significant flavor contribution that allows the pistachio to be clearly perceived. Only in some moments will you be able to catch a slight hint of the pistachio's sweetness, but it is far too masked by the other ingredients.
As mentioned, the dough is excellent, both in taste and leavening, and all the other ingredients are also top-notch, giving an overall flavor that is truly enjoyable.
A pizza that has potential and we hope it can improve. As it stands, the rating for the pistachio flavor is 4/10.
