THEY HAVE MODIFIED AND IMPROVED EVERYTHING
Pizzeria Ottavo Senso, in Paternò, is very active on social media, delighting us every day with photos of their wonderful pizzas, from the most common ones to the most delicious off-menu specials. We rushed to try their pistachio pizza.
At the time of writing, there are two pistachio pizzas: the one on the menu, which we tried, and an off-menu one. In terms of pistachio, both rely on cream and chopped pistachios, so there shouldn't be much difference.
The ingredients are: pistachio cream, prosciutto crudo, chopped pistachios, and parmesan shavings.
The crust (cornicione) is well-leavened, and upon taking a bite, the perfect level of softness of the dough is confirmed, characterized by a very pleasant, slight "roughness" on the palate, as it is a 9-grain dough. Our pizza's dough was a bit low on salt, a factor that didn't bother me, given the abundant amount of parmesan on the pizza, but it might put off those who prefer more savory foods. It could, however, have been a one-off.

Regarding the topping, we found the pizza truly delicious and enjoyable, with an excellent balance of flavors and uniformity of the toppings. The pistachio cream is truly delicious, combining the taste of pistachio (though not very strong) with that of the parmesan (decidedly abundant), which adds flavor and savoriness. The chopped pistachios are good and, while they don't completely transform the flavor of the pizza, they still offer their own small contribution to the taste.
The pistachio flavor is good, but not very bold, hence the rating of 7/10. Highly recommended if, like me, you love parmesan, because then you will absolutely love this pistachio cream.
PS: the pizzeria also offers takeaway.
