A delicious gourmet pizza, topped entirely raw.
The pizzeria Perlage, in Catania, has shaken up the takeaway pizza market, establishing itself as the city's first gourmet takeaway pizzeria. By focusing immediately on excellent dough and quality ingredients, it quickly gained widespread acclaim.
Their menu offers three different pistachio pizzas, and we tried both the Bronte and the Perlage. In terms of pistachio flavor, the 'Bronte' wins by a slight margin, while for overall taste, the 'Perlage' manages to offer a few more flavor notes, while still maintaining a high level of pistachio quality.

The 'Perlage' is made with: pistachio pâté, stracciatella fiordilatte, prosciutto crudo, sun-dried tomatoes, and chopped pistachios.
The ingredients are refined and balanced, each one delicious, carefully placed on every slice of the delicious dough that characterizes Perlage's pizzas.
The pistachio, while very present, is not the only star of the show, as it blends with the bold flavors of the stracciatella and sun-dried tomatoes, as well as the prosciutto. The pistachio used is of high quality, which is evident from its color and fully confirmed by its taste.
