Excellent dough and generous pistachio pesto.

Pudamuri, in Nicolosi, is a large and welcoming restaurant with a rich menu that includes many tempting pizzas. We tried their pistachio pizza, named "Verde Speranza".
The ingredients are: mozzarella, pistachio pesto, pancetta, chopped pistachios, basil. There are several dough options available; in this case, the restaurant suggests Timilia (though we tried it with the classic dough).
The dough is truly excellent, in keeping with the tradition of many spots in Nicolosi. The pizza is the right size—large, but not giant.
The ingredients are all of excellent quality and the balance of flavors is spot on.
The pistachio pesto, while not among the most intense, is very generous, providing an overall excellent pistachio flavor that is well-distributed across the entire pizza, but especially on the crust, where it isn't covered by the mozzarella.
Given the pistachio flavor—delicate but constant and well-distributed—it earns a rating of 8/10. Add to this an excellent overall pizza and a truly beautiful, welcoming venue, and it is definitely recommended.
