Excellent dough, but the pistachio needs work.

Pizzoleria "Le Monache", in Sortino, is well-known as one of the best pizzolerie around, if not the very best. After enjoying their excellent pizzoli, we decided to put their pistachio pizzolo to the test.

Inside the pizzolo, along with cheese, we find a mix of chicken and pistachio, a famously winning combination.

The filling is encased in their famous dough, which is super crunchy and incredibly light at the same time—truly tasty, captivating the palate and making it impossible to stop eating!

As for the toppings, both the cheese and the chicken chunks are excellent, while the pistachio flavor is almost entirely absent, despite some green notes inside. There is a sort of sweet note meant to evoke the taste of pistachio, but we couldn't quite identify it.

The location is simple but welcoming, and the service is kind.

Overall, it is a good pizzolo with balanced ingredients and a certainly pleasant flavor, but it disappointed us on the pistachio front, hence the rating of 4/10.

We highly recommend you try the other extraordinary pizzoli on their menu, but we always hope the restaurant might decide to improve the pistachio pizzolo, which would encourage us to try it again with great pleasure.
