Excellent dough and quality pistachio.
Pizza e Core is an elegant pizzeria located in Piazza Armerina (Enna).
Situated right in the city center, it features a very polished style and a truly extensive menu.
The highlight is the light, airy dough, in a contemporary style. The quality of the ingredients is also excellent; they are never mundane and make for a varied and interesting menu.
The pistachio is present both as a pesto and as crunchy chopped nuts, successfully delivering a good pistachio flavor on the palate.
One note: the "spread out" arrangement of the cured meat tends to overpower the pistachio in almost every bite. I would prefer a less uniform distribution of the meat (in this case, the prosciutto).
The red pizzas are also highly recommended, as the tomatoes used are of excellent quality!
