A good Neapolitan pizza, but the pistachio flavor isn't very strong.

During one of our trips to Milan, we decided to continue our search for the best pistachio pizzas by trying the one offered by Pizzeria Assaje in Milan, which looked inviting and is made with Pistacchio Verde di Bronte DOP.

We were welcomed into a very well-kept and dynamic venue, with extremely lively and kind staff who make you feel right at home. Customers are followed with care, and the small welcome appetizer, featuring little fried pizza dough bites, is a very nice touch.

The menu is immediately surprising for its very competitive prices, especially for the pistachio pizza at only €10, even considering the certified origin of the Bronte pistachio. The visual presentation, shown with a large photograph, is inviting and raises expectations significantly.

When the pizza arrives at the table, aesthetic expectations are fully met, with generous toppings and a fluffy crust. To be honest, the pizza that arrives at the table is even better-looking than the one in the menu photo!

Upon tasting, it confirms itself as a good Neapolitan pizza with a quality dough, although perhaps not my favorite among the Neapolitan pizzas I've had in Milan or elsewhere. Specifically, for my own personal taste, I find the "flavor of the flour" a bit too prominent in the dough, making it feel slightly rustic (with all due caveats).

The quality of the ingredients is high and you can taste it, especially in the delicious mortadella, which is a delight in every bite. However, the pistachio, despite being high-quality, never manages to stand out. Even in the spots where the pesto is on its own, without cheese or mortadella, you taste the oil more than the pistachio, due to the choice of baking the pesto, which makes the oil "fry" and overpowers the flavor.

Returning to the mortadella, the choice to place it only in certain areas is excellent, avoiding a monotonous mortadella flavor across the entire pizza (a mistake made in many pizzerias).

Ultimately, it is a good pizza at a great price with huge potential, which could be improved, in my opinion, by adding the pesto raw rather than baking it. As it stands, my rating is 7/10.
