Pizzeria Esperia is among the most renowned in Noto, thanks to the quality of its dough and raw ingredients. We tried their pistachio pizza!
This pizza falls into the gourmet category, so it is topped slice by slice. The ingredients are: pistachio pesto, fior di latte bocconcino, grana shavings, chopped pistachios, basil, and olive oil.
The dough is soft and light, well-aerated, with a slight, very pleasant outer crunch. The saltiness is also excellent.
The overall flavor mix is spot on, but in this harmony, the pistachio doesn't play a leading role, due to a pistachio pesto that isn't particularly punchy.
Overall, therefore, an excellent pizza, absolutely in line with the general quality of the venue, which stands out for its dough and certain ingredients, as well as for its aesthetics and service. The pistachio is not the star, but a pleasant, non-negligible background note.
