But if pistachio is their crown jewel, the Carbonara is the other pillar that makes this little restaurant on via Crociferi, just a stone's throw from via Etnea, a must-visit for anyone who loves serious pasta.
Let's be clear: this isn't just a "good" carbonara. It is, in my opinion, the best in Catania to date. The dish arrives at the table in a generous portion, with a deep yellow color that immediately gives away the abundance of egg yolks used. No cream, no compromises: just raw ingredients handled with impeccable technique.
The first bite confirms all expectations. The creaminess is enveloping, almost silky, thanks to a perfect emulsion of eggs, pecorino, and pasta water. The guanciale is the true supporting star: cooked to perfection, it maintains a pleasant crunch that contrasts with the softness of the pasta, without ever being tough or overly salty.
